weekly menu and blog plans



Here we are at the start of a new week.  Wow, those weekends pass rather quickly!  It was a great weekend for us.  I’m tired but quite inspired by the events of the weekend and that seems to have given me a little boost to go ahead and get the menu planned for the week. 

Monday:  Chicken chalupas with nacho chips & the fixings, black beans, salad (the fixings:  cheese, lettuce, sour cream, salsa, tomatoes)

**start beans early, cook chicken in slow cooker

Tuesday:  Chicken sandwiches on homemade rolls, roasted potatoes, broccoli

**cook bone-in chicken, reserve broth, divide chicken for three meals, make rolls for Tuesday meal

Wednesday:  Chicken and biscuits, green beans

Thursday:  Chicken and sausage jambalaya, salad, quick rolls

Friday:  Family night!  Probably pizza

Breakfasts (serve with fruit):  Eggs with toast/grits/biscuits, pancakes, waffles, smoothies, oatmeal

Lunches (serve with veggie/side & fruit):  Spaghetti, Hot dogs with chili, Mexican chicken, Tomato/Noodle Soup & Sandwiches

2013 word of the year

Since my word of the year is “focus”, I am trying to become more mindful of the happenings in my life.  My plan is that by becoming more focused on the details, I won’t feel so behind all the time because maybe I’ll actually get on top of things…well, that’s the plan on paper, anyway!

In order to focus the blog, I’m going to make a tentative blog posting schedule.  I’d like to say that I’ll follow this closely but I wouldn’t be surprised if I chased a rabbit off of the blog post trail every once in a while!

A very rough blog posting schedule:

Monday:  Menu plans, goals/focusing, home/saving money

Tuesday:  Garden, City farming, Nature

Wednesday:  Open for various topics (books, homeschooling, daybooks, more garden posts during the garden season, etc)

Thursday:  Family or hobbies (knitting, sewing, cooking, etc)

Friday:  Homeschool, School week in review posts

Saturday/Sunday:  Typically, I don’t post on the weekends.  Sometimes during the spring/summer months, I’ll post garden notes to keep up with the garden.  And sometimes I’ll post our weekend adventures.
