Did I actually just type the word February? Seriously? Time seems to speed up a little more every day!
This week we find ourselves at home a little more as compared to last week. {Yay!} Which means we will have more time to make some homemade yummy goodness.
Chicken was on sale this week so we bought a few to roast & shred. Recently I stumbled upon this link on Pinterest about 40 meals for using shredded chicken. Since we eat a lot of chicken, I was glad to come across that link.
Here’s our plan for the week:
Monday: Chicken and gravy, mashed potatoes, green beans
Tuesday: Spicy sausage stromboli, salad, pineapple
Wednesday: Shredded BBQ chicken sandwiches, oven fries, broccoli
Thursday: White bean & ham soup, grilled cheese sandwiches
Friday: Family night (we’ll probably have pizza or hamburgers)
Lunches: (add fruit)
- sticky noodles and sandwiches
- salsa chicken soup and quesadillas
- fried rice with chicken & veggies
- spaghetti with fruit/yogurt smoothies
- hot dogs with chili, oven fries
- leftover red beans & rice (for David and me)
Breakfasts: (add fruit or smoothies)
- Oatmeal
- Eggs (fried, hard-boiled, scrambled)with toast
- Pancakes or waffles
Snacks: Salty popcorn, Kettle corn, fruit, peanut butter sandwiches, apples with peanut butter
